Ingredients
1/4 cup arils from 1 pomegranate
4 slices whole wheat bread, toasted
1/2 cup cottage cheese
1/4 teaspoon cinnamon
1/4 cup sliced almonds
1 orange, peeled and segmented (about ¼ cup)
Preparation
Extract arils from pomegranates.
Cut toast diagonally into four triangles and set aside. Remove crust if desired.
Mix cottage cheese with cinnamon and divide evenly on each triangle.
Divide segmented oranges, almonds and arils on each triangle and serve.
